The occasion

Weddings catering in Los Angeles & Orange County

What it takes to cater weddings well — the logistics, the timing, and how we make it work.

A wedding is the one event a caterer cannot rehearse on the day. The cocktail hour has to land while the couple is still taking photos, the first course has to clear before the toasts, and the plated dinner has to arrive at every table inside the same few minutes — all of it timed against a Los Angeles sunset that waits for no one. We plan a wedding backward from that light: we build the service timeline against your ceremony start, your golden-hour window, and the moment the band is meant to play, then we staff to hit each mark without the room ever feeling hurried.

Most of the venues we cater across LA and Orange County — the estates above Malibu, the lofts downtown, the gardens in the hills, the coastal sites in Newport and Laguna — have no real kitchen, or a kitchen built for a restaurant a tenth of your guest count. That is the work we are built for. We arrive with a full field kitchen: chef stations, cold lines, hot-holding, and the power and water plan worked out with your coordinator weeks ahead, so the food that reaches your guests tastes cooked on site, because it was.

Everything starts at the table before it reaches the aisle. Every wedding engagement includes a tasting with the chef, where the menu is settled in person and the dietary tracks — vegan, halal · zabiha-sourced, gluten-free — are mapped to the guests who need them, plated to look like everyone else's plate, not an afterthought from the kitchen. From there a captain owns your floor on the day, so neither of you is ever the person chasing down a server.

Why Carthage

Why Carthage for weddings

What you get with us for weddings specifically — not a generic catering pitch.

  • A tasting with the chef, before you sign

Every wedding includes a sit-down tasting at the table — the menu is corrected in person, the proteins and sides are settled, and nothing goes on the final sheet that you haven't actually eaten.

  • A captain owns the floor

A dedicated captain runs your service on the day, briefed on your timeline and your VIP tables, so the couple, the planner, and the family are never the ones flagging down staff.

  • Timed to the sunset, not the clock

We build the service plan backward from your golden-hour and toast windows, rehearse the plating pace, and pace cocktail hour, dinner, and dessert so the room never stalls and never rushes.

  • Full field kitchens for venues without one

Estates, gardens, lofts, and coastal sites across LA and OC rarely have a working kitchen. We bring our own — stations, cold lines, hot-holding, power and water planned with your coordinator — so the food arrives cooked on site.

Questions

Before you ask

Do you offer tastings before we book?
Yes — every wedding engagement includes a tasting at our Melrose atelier with the chef at the table. Menus are corrected in pencil, then signed in ink.
Can you cater at a venue without a kitchen?
It’s our specialty. We build full field kitchens — chef stations, cold lines, even a wood-fired hearth — on cliffsides, gardens, and lofts across LA.
How do you handle guests’ dietary restrictions?
Every menu runs parallel dietary tracks (vegan, halal · zabiha-sourced, gluten-free) plated identically to the main course, tracked from your RSVP cards.
How far ahead should we book our wedding?
Four to nine months is typical, which gives time for a tasting, a venue walk-through, and the field-kitchen plan. Shorter timelines are possible for dates that are still open — ask and we’ll tell you honestly what’s workable.
Do you serve both LA and Orange County weddings?
Yes — we cater across Los Angeles and Orange County, from estates above Malibu to coastal sites in Newport and Laguna. We build the load-in and field-kitchen plan around each venue ahead of the day.
Can the whole wedding menu be halal?
Yes, and it often is. Every protein is zabiha-sourced and the full menu can run halal end-to-end with no substitutions — we’re zabiha-sourced, not certified, and we say so plainly.
