How live stations work
When stations earn their place — and what they need
Live stations are the format when you want the cooking itself to be part of the event: a launch party, a wedding cocktail hour, a reception where guests should have something to gather around between conversations. They are built on staffed buffet service, but the centerpiece is a chef working in the open — carving shawarma off the spit, shaving a taco trompo, finishing pasta in the wheel, searing off a charcoal grill. You reach for them when food-as-entertainment matters more than a seated, timed meal; one signature station suits an intimate party, while a circuit of two or more keeps a large room moving and gives guests a reason to wander.
Each station travels as its own kit: we bring the equipment — spit, trompo, grill, or wheel — plus a dedicated chef attendant who cooks to order and keeps the station styled and lively through service, and a team to set up and break down around it. Because there is live cooking, the venue requirements are real: we confirm power, ventilation, and the load-in path with your venue ahead of the day, and lay out the stations so the lines do not collide with the flow of the room. What the guest experiences is fresh, hot food handed over with a bit of showmanship; what you hand off is the headcount, the venue contact, and the floor plan, and we engineer the rest around them.
