CARTHAGEKITCHEN

Featured & fusion

Two traditions. One plate.

Where the test kitchen plays. Each featured menu blends our cuisines into one named concept — and every dish on it is a real Carthage dish, cooked from scratch in the same chef-led kitchen.

The fusion idea

Why two kitchens, one fire

Fusion catering usually means a buffet bolted together from outside vendors. Our featured menus do the opposite: six cross-cuisine concepts cooked from scratch in one chef-led Los Angeles kitchen, so two traditions meet over the same flame instead of two caterers taking turns. Mediterranean meets BBQ when the spice-route grill and the American pit share one charcoal bed. Mexican meets the shawarma spit, Mediterranean meets Italian over slow braises and pasta, American comfort meets Mediterranean and BBQ on one tray, breakfast crosses into the mezze board, and one all-kitchens feast pulls every cuisine onto a single table. The pairing works because grilling and slow-cooking are a shared language, not a clash.

None of it is invented. Each featured menu is assembled from dishes we already make — kofta and lamb chops, charcoal beef, baklava — all zabiha-sourced and cooked to order, then composed and named as one experience rather than a second menu. A host commissions a fusion catering menu the same way they'd book any of ours: pick the crossover that fits the event, tell us the guest count, and we tailor the spread and price it per person in a written proposal. Want a pairing of your own two kitchens? Name them, and we build the bridge from real Carthage dishes — no stock template, no mystery sourcing, one kitchen accountable for every plate.
