A truck or cart parks and cooks in front of your guests — the format people photograph and remember, and the one with the most logistics sitting behind it.

  • Made to order, in front of guests

    Nothing is held. Each plate is cooked as it is ordered, which is the whole appeal and the reason the queue moves at the pace of the grill.

  • The lot decides everything

    Level ground, overhead clearance, power and where the truck may legally sit are settled before the menu is — a truck that cannot park is not a service.

  • Permits checked, not assumed

    For a public event we confirm what the county actually requires of the truck rather than finding out at the gate.

    Before you ask

    What does the truck need from the site?
    Level ground with room to park and open a service window, clearance overhead and to the sides, and either a power drop or the truck's own generator. The surface matters too — a truck that sinks into soft grass makes a longer evening for everyone.
    Do we need a permit?
    For a private event on private property, usually not. For a public community event in Los Angeles County a truck already holding a current county permit may serve without an additional temporary-food-facility permit, while a truck without one has to obtain a permit — and once enough vendors are involved the organiser needs a permit of their own. The thresholds differ between counties, so we confirm the position for your specific event and venue rather than assuming it.
    How many guests can one truck feed?
    The menu decides that more than the truck does — a short menu moves a queue far faster than a broad one. We size the menu to the window you have, and past a certain headcount a second service point helps more than a second truck.
    Is the food halal?
    Yes — halal · zabiha-sourced throughout, with vegan, vegetarian and gluten-free cooked on the same service and labeled.
