The idea is that fire is the common language between two grilling traditions that rarely share a table. The spice routes bring the kofta kebab and lamb chops, marinated and seared hard; the American pit brings the charcoal beef, slow and smoke-forward. Set side by side off the same coals they read as one menu rather than two cuisines politely taking turns — a mezze board and a Greek salad to graze between rounds, grilled and Mediterranean seafood platters for the lighter hand, and baklava to close on something honeyed. It is built to be worked slowly across an afternoon, which is why it suits a summer party or a wedding that runs long.
