Catering Huntington Beach, properly

Huntington Beach briefs lean casual and outdoor: pier-side festivals, beach weddings, corporate beach days, and farmers-market pop-ups along the coast. Live grills and mobile stations are made for this town, and most of the work is the kind that happens on sand, on a lot, or on a closed street rather than in a room with a kitchen.

The permitting here is stricter than most people expect, and it is worth being plain about. At a public community event in Orange County every food vendor needs its own temporary food facility permit — including operations that already hold a permit of their own, and including food that is given away rather than sold. Free samples are not an exemption. One permit covers one booth at one event at one location, so two booths mean two permits, and two events on the same day mean two more. We carry that rather than discovering it at the gate, because the alternative is a booth that does not open.

The wind off the water sets everything else. It arrives on schedule most afternoons and it is the difference between an elegant open station and a scene — so canopies are ballasted rather than staked where the ground is hardscape, anything open-flame gets a shielded position downwind of the guests, lids and covers go on as a matter of course instead of after the first gust, and lightweight service ware simply is not used here. Sand is its own problem: it moves under a table leg, it gets into everything left open, and the walk from where a vehicle can legally stop to where the food is going is usually much longer than a client expects when they picture it.

We plan that walk before we plan the menu — beach and pier access rules decide where a vehicle can stop and for how long, and that distance drives the staffing more than the guest count does. Everything is halal and zabiha-sourced throughout, the grills run the same standard as the kitchen, and we take the waste away with us so the sand is left the way we found it.
