WeHo events skew intimate and design-forward: showroom dinners, rooftop birthday parties, and launch events where the tablescape is part of the press kit. Our Melrose atelier is ten minutes away, which makes same-week briefs possible in a part of town where that is otherwise difficult.

The street is the constraint here, and it is unforgiving. Much of West Hollywood is narrow, permit-parked and busy at exactly the hours an evening event loads in, and a truck sitting at a red kerb on Santa Monica or Melrose is not a risk worth taking. So we pre-pull parking permits where they are needed and stage from the atelier instead — smaller vehicles, more trips, food arriving in waves timed to the run of the evening rather than one delivery that has to sit somewhere while it waits. It costs us more movements and it is the only version that works on these blocks.

These rooms are also small and exposed, which changes how service has to look. In a showroom or on a rooftop there is no back of house to retreat into: the guests can see the trays being loaded, so the loading has to be part of the design rather than hidden badly behind a screen. We plan a staging position before the menu is finalised, keep the footprint deliberately tight, and staff to the sightlines rather than to the headcount — a room of sixty where everyone can see everything needs more hands than a room of a hundred where they cannot.

Launch and press events add one more constraint: the food is being photographed, so it has to hold its appearance for the length of a shoot and still be worth eating afterwards, which rules out a good deal of what looks best in the first ten minutes. Everything is halal and zabiha-sourced, plated to match across every dietary line, so a guest with a restriction is photographed eating the same thing as everyone else.
