Inside Taco Al-Shawarma
Both the shawarma spit and the taquero work the same trick — meat cooked low and slow, then shaved or chopped to order and folded into something handheld — so the mashup is less a fusion stunt than a recognition that the techniques already rhyme. Here the chicken and beef shawarma get the taqueria treatment alongside the wrap platters, the falafel covers the plant-based plate, and the guacamole, chips, and a mixed fusion salad ride alongside the way a salsa bar would. Churros close it out. Everything is handheld and fast-moving by design, which is why it reads as street food and empties quickly at a festival or a launch.
