An engagement party is usually the smallest thing we cater and the most exposed, because the room is close enough that everyone can see the service working. Passed appetizers need enough staff to keep moving — a tray that reaches half the room is worse than no tray at all — so we staff to the room rather than to the headcount, and we work out where trays are loaded and reloaded before the night starts, which in a private home usually means a corner of a kitchen somebody else is also using. The evening tends to run in two halves: a mixing hour when nobody sits, and then a point where the room wants to settle. We plan for that turn instead of being caught by it, and keep the transition quiet rather than announcing it.
