Operationally, we arrive ahead of service to set the line, build the live station, and stage the backups, then run the room with on-site attendants who keep platters stocked, the surface tidy, and the flow moving so nothing sits empty or cold. One chef works the live station — a shawarma spit, a taco trompo, a grill — cooking to order as the centerpiece, which is the moment guests gather around. At the end the team breaks down the line and clears, so cleanup is ours, not yours. What the guest experiences is a generous, replenished spread with a bit of theatre at its heart; what you hand off is the timeline and the headcount, and we run the rest.
