So for anything in the stadium district we check the calendar before we quote, build the load-in around the closures rather than around our kitchen, and stage earlier than feels necessary — because there is no version of this where we talk our way through a closed street at kickoff.

Corporate hospitality around a game or a show is its own discipline: a suite, a hospitality tent or an office watch-party runs to somebody else's clock, and food that arrives at the wrong point in the schedule is worse than food that is merely late. We build those backwards from the event time, not from the delivery window, and we plan for the fact that people eat in bursts around whatever is happening on the field rather than steadily across an evening.

Away from the venues the work is warmer and simpler — repasts and memorial receptions, graduations, birthdays, church and community events, and family gatherings where the point is that there is plenty and it keeps coming. Everything is halal and zabiha-sourced, soul food and barbecue sit on the menu alongside Mediterranean, and for a hall with a kitchen we will use it, while for one with nothing but a back door we bring what cooking requires with us.
