What is being bought is the absence of interruption: food that appears and is cleared without anyone breaking a sentence, staff who do not introduce themselves to the table, and no question asked of a director that could have been answered in advance. Our captains work these rooms on silent-service protocol and are comfortable signing NDAs where the agenda requires it. Practically that means we ask you for the run-of-show rather than the menu first, place service in the gaps you identify, and stage everything outside the room so nothing arrives through the door mid-discussion. Where the meeting is likely to overrun — and it usually is — we plan to hold rather than to serve on the hour.

On the food itself, the honest split is between a plated service and a premium platter build. Plated is right when the session has a genuine seated break and you want the room to feel like a private dining room; it needs staff and a little more runway. Premium platters are right when the meeting will eat while it works, and at this level that means composed boards rather than catering trays — mezze with warm bread, chilled prawns, marinated lamb or beef skewers, seasonal cut fruit, and a small pastry course rather than a dessert buffet. Every dish is halal · zabiha-sourced and labeled, dietary requirements are planned against the attendee list in advance rather than covered by a spare vegetarian tray, and 48 hours is usually enough notice. Invoicing is itemized and discreet, with COIs on file and net-30 for established accounts.
