What it takes to cater christmas well — the logistics, the timing, and how we make it work.

Christmas dinner is the one meal of the year people have opinions about before they sit down. It is also the meal most likely to be cooked for a room that does not all eat the same way — which is the part we are actually built for. We cater Christmas Eve and Christmas Day across Los Angeles: a carved roast at the centre of the table, the sides that go with it, and a spread that one household can share without running two separate menus.

This is a halal kitchen, and at Christmas that turns out to be a feature rather than a constraint. There is no pork here at all, so a guest who avoids it is not reading labels or taking anyone's word for it — the question simply does not arise. No alcohol goes into any dish, so there is no wine in the gravy and nothing in the pudding to ask about. For a Muslim family hosting relatives who are not, or an interfaith household where half the table keeps halal and half does not, that means one order, one table, and nobody quietly eating around the middle of it.

Los Angeles keeps Christmas on more than one calendar, and we cook to whichever one is yours. The Armenian Apostolic church marks it on 6 January and the Coptic and other Orthodox churches on 7 January, and those dates are as bookable here as 25 December — the Armenian menu is already on this site to cook from. Levantine and Middle Eastern Christian households often want the roast alongside the food they actually grew up eating, so the menus pair a turkey or a leg of lamb with mezze, stuffed vine leaves, rice with nuts and dried fruit, and ma'amoul rather than replacing one tradition with the other.

Practically, Christmas is a two-date business and both of them are fixed. We take a limited number of bookings for Christmas Eve and Christmas Day and they go first, so the useful thing is to reserve the date early and settle the menu later. Everything is delivered set and labeled with vegetarian, vegan and gluten-free running as standing lines, priced per guest on one itemised invoice, and cleared so the kitchen is not yours to deal with on the night. Full service with staff is available on both dates for a table that wants to be waited on rather than helped.

Staffing, rentals, delivery, setup and breakdown are separate lines, and a mandatory service charge and California sales tax apply on top — so the invoice for a staffed event runs meaningfully above the food figure. Questions

Before you ask

Is the turkey halal?
Yes — the turkey, the lamb and every other protein are zabiha-sourced, and there is no pork in the kitchen at all. Our suppliers hold the halal certification and will show it on request; we claim none of our own.
Can you cater a table where some guests keep halal and some don't?
That is the situation this menu is built for. Because nothing on it contains pork or alcohol, the whole table eats from one order — there is no separate halal tray and nobody is served differently. Every dish is labeled, so guests with other requirements can see what is in front of them.
Do you cater on Christmas Day itself?
Yes, and on Christmas Eve. We take a limited number of bookings for both dates and they fill before the rest of December, so reserve the date first and settle the menu afterwards.
We celebrate on 6 or 7 January — can you cater that?
Yes. Armenian Christmas on 6 January and the Orthodox and Coptic date on 7 January are booked exactly as 25 December is, from the same menus — the Armenian menu is already one of ours.
Is there alcohol in any of the cooking?
No. No wine in the gravy, no brandy in the dessert, nothing that needs asking about. If a recipe traditionally calls for it, we build the dish another way rather than serving it and mentioning it later.
What about vegetarian, vegan and gluten-free guests?
They run as standing lines rather than as substitutions requested in advance, and every dish is labeled. A vegetarian centrepiece can take the place of the roast for guests who want one, on the same table.
