A full-day continental breakfast and hot lunch buffet for 75 County of Los Angeles Office of the Public Defender personnel — requiring 7:00 AM delivery, strict California CDPH food safety compliance, multi-dietary accommodations (halal, vegetarian, and dairy options), and continuous beverage station replenishment across a six-hour civic training session.
Our approach
In partnership with Stamped Passport Society (a California CDPH-registered and LA County Health-permitted DVBE partner), we orchestrated an end-to-end all-inclusive service. Morning service featured warm egg bites in stainless chafing dishes (beef bacon & cheese plus spinach & feta), 100 pieces of artisanal croissants and pastries, vibrant seasonal berry and melon trays, and a dual charcuterie and European cheese spread with dates, olives, and preserves alongside a commercial Bunn coffee and beverage station.
On the day
Load-in and setup commenced at 7:00 AM sharp at the lakeside conference facility. Morning continental service launched at 9:00 AM with fresh-brewed coffee, juices, and hot egg bites. At midday, our culinary team seamlessly transitioned to hot lunch buffet service: slow-roasted seasoned chicken with Yukon gold potatoes, classic spaghetti with house marinara, garden-fresh Greek salad with feta and olives, grilled vegetables, artisanal bread baguettes, and an 85-piece layered baklava dessert platter.
The outcome
75 county public defenders and staff were fed seamlessly on a tight schedule with zero downtime during sessions. Pricing remained strictly within LA County per-diem guidelines at an all-inclusive $28/head covering both breakfast and lunch with complete cleanup and breakdown.
