The brief
A two-day intergovernmental summit with strict procurement rules: itemized per-head invoicing, full allergen labeling, security-cleared staff, and a delivery window measured in minutes at a controlled-access building.
Our approach
We pre-cleared every staffer and vehicle, built a labeled buffet with allergen cards on each dish, and ran a duplicate cold line so dietary delegates served from the same spread as everyone else — never a separate table.
On the day
Security pushed load-in back forty minutes on day one; our staged prep absorbed it and the first break still opened on schedule, to the minute.
The outcome
The summit’s procurement office passed our invoicing on first review and added us to the city’s standing vendor list.
