The occasion
Trade Shows catering in Los Angeles & Orange County
What it takes to cater trade shows well — the logistics, the timing, and how we make it work.
On a trade-show floor, food is what stops traffic at your booth and keeps your team standing. We cater expos with booth grazing spreads, boxed staff meals and beverage service — delivered to the hall on the convention centre schedule, all halal, priced per guest.
Expo catering is two completely different jobs wearing one name, and conflating them is the usual mistake. Job one is booth traffic: food as a reason to stop, which means it has to be visible from the aisle, smell good from two booths away, be handed over in under five seconds without a plate, and leave no litter you then have to deal with in a carpeted hall. Job two is keeping your own team standing. Booth staff work eight to ten hours on their feet, usually skip lunch because the aisle is busy exactly when the food hall is, and are the reason a good booth goes flat by mid-afternoon. Those need different food, different timing and different budget lines, and we quote them as two things rather than one.
The rest is the building. A convention hall is a controlled environment with its own delivery windows, receiving process, dock and marshalling arrangements, and its own rules about what an outside caterer may bring in — and those rules belong to the venue, not to us. We plan the load-in around them and confirm them for your specific hall and dates before the show rather than arriving to find out, and we schedule around the aisle rather than the clock so delivery does not happen in your busiest half-hour. Staff meals come individually boxed and labeled so they keep in a back-of-booth cooler and can be eaten in the gaps rather than in one break that never comes. Everything is halal · zabiha-sourced with vegetarian, vegan and gluten-free alongside, priced per guest, for a single day or a full multi-day show on one invoice.
Why Carthage
Why Carthage for trade shows
What you get with us for trade shows specifically — not a generic catering pitch.
Booth traffic and staff meals quoted separately
Food that stops the aisle and food that keeps your team standing are different jobs with different timing and budget. We price them as two things.
Handed over in five seconds, no litter
Visible from the aisle, no plate or cutlery, nothing that leaves waste you have to manage in a carpeted hall.
Load-in planned around the hall's rules
Delivery windows, receiving, dock and marshalling confirmed for your specific hall and dates before the show. Those rules are the venue's — we work to them.
Boxed meals that survive the gaps
Individually boxed and labeled so they keep in a back-of-booth cooler and get eaten in the gaps rather than in a break that never comes.

Trade Shows catering runs about $17–$48 per guest for food. Multiplied out, that is what a spread costs at the counts people usually ask about.
| Guests | Estimated food cost | Per guest |
|---|---|---|
| 25 | $425 – $1,200 | $17 – $48 |
| 50 | $850 – $2,400 | $17 – $48 |
| 100 | $1,700 – $4,800 | $17 – $48 |
| 150 | $2,550 – $7,200 | $17 – $48 |
Food only. Staffing, rentals, delivery, setup and breakdown are separate lines, and a mandatory service charge and California sales tax apply on top — so the invoice for a staffed event runs meaningfully above the food figure. Smaller counts sit at the top of the band: setup and delivery cost the same at 25 guests as at 100. Every menu halal · zabiha-sourced.
