GUIDE — LOS ANGELES

Dietary catering is hosting, not a special request

In a city as diverse as Los Angeles, a guest list almost always includes people with dietary requirements — religious, medical, ethical, or personal. Treating those needs as part of the core menu, rather than a side accommodation, is what separates a thoughtful event from an awkward one.

The key is precision. Terms like halal, vegan, and gluten-free each mean something specific, and a good caterer should be able to tell you exactly how they handle each one. This guide explains the terms plainly and shows you how to brief a caterer so there are no surprises.

Halal: ask how the protein is sourced

Halal means permissible under Islamic dietary law. For catering, the practical questions are how the meat was sourced and slaughtered, and whether it was kept separate from non-halal ingredients during prep and service.

We source halal proteins as zabiha — slaughtered according to Islamic rite — from named suppliers, with documentation available on request. We describe this honestly as zabiha-sourced, not as a certification we don't hold: there's a meaningful difference between sourcing zabiha proteins and being a certified halal kitchen, and a trustworthy caterer will tell you which one they are. We also prepare halal dishes on separate lines, keep them free of alcohol in cooking, and label them per dish at service.

Vegan and vegetarian done right

A good vegan or vegetarian offering is designed as a proper main, not the salad nobody chose. Ask whether plant-based dishes are first-class menu items and whether they're prepared without shared fryers or surfaces used for animal products.

Watch the hidden ingredients: honey, dairy, eggs, gelatin, and meat-based stocks all disqualify a dish from being vegan or vegetarian. We track those at the ingredient level and flag them per dish, and we build vegetable stocks in-house so there are no hidden meat bases.

Gluten-free and allergen safety

For a guest with celiac disease, "gluten-free" is a medical requirement, not a preference — trace cross-contact can make them ill. That calls for dedicated prep zones, separate boards and fryer oil, and sealed, individually plated service on request.

Ask any caterer for an allergen sheet that lists gluten sources down to soy sauce, and confirm that cross-contact protocols are briefed to service staff before the event. The same rigor applies to nut, shellfish, and dairy allergies.

How to brief your caterer

You don't need to be an expert — you need to ask the right questions and share what you know. A clear brief lets the kitchen engineer the menu around your guests instead of patching it together on the day.

  • Collect dietary needs with your RSVPs, and give the kitchen a headcount per restriction.
  • Ask specifically how each need is handled — sourcing, separate prep, and labeling — not just whether it can be "accommodated".
  • Confirm that every dish will be labeled at service and that an allergen sheet will be provided.
  • Always include at least one inclusive main so no guest is left with only a side.
  • For halal needs, ask whether the caterer is sourcing zabiha or holds formal certification — and get the answer in writing.
