A formal event that happens to be a taco bar
A quinceañera is a formal occasion — there is a dress, a ceremony, a choreographed entrance, and photographs that will be looked at for decades. It is a mistake to cater it as though it were a birthday party, and an equally common mistake to cater it as though it were a wedding.
What it usually wants is generous, familiar food served in a way that does not interrupt a long programme. A staffed taco and grill service does that: birria, barbacoa, al pastor and steak, served across the evening around the parts of the night that are scheduled.
Our al pastor is beef rather than pork, which means a guest list spanning several generations and several families eats from one table.
- Birria, barbacoa, al pastor, chicken tinga and steak — all zabiha-sourced
- Warm tortillas, pickled onion, cilantro, lime and salsas labelled by heat
- Mexican rice, refried beans, elote, guacamole and loaded nachos
- Horchata, agua de jamaica and agua de tamarindo, served all evening
- Churros and tres leches alongside the cake
The programme decides the service, not the other way round
A quinceañera has a running order — the entrance, the waltz, the toasts, the dancing — and food served across the middle of any of those is food nobody eats.
Give us the programme and we will build service around it: something substantial before the formal section, the main service once it ends, and the bar kept replenished through the dancing. That is a planning conversation worth having weeks ahead rather than on the day.
Three hundred people and one family paying for it
Quinceañera guest lists are large and the family hosting is usually paying for all of it, so cost per head matters more here than at almost any event we cater.
A taco and grill service is the most generous-looking food we can put in front of three hundred people for the money, because the tortilla, rice and beans carry a large share of the plate. The saving not worth making is the aguas frescas — they cost very little, they run all night, and at a dry event they are what the drinks table actually is.
