The anti-December party
Some holiday parties are chosen specifically to not be a holiday party — no turkey, no cranberry, no pine. A taco bar is the most common way people do that, and it works because it is festive without being seasonal.
It is also the fastest format we have for a room that will not sit down. Fillings in warmers, a self-serve toppings line, and two hundred people fed without anybody carrying a plate.
Our al pastor is beef rather than pork, so an office party with a mixed room needs no separate tray and no quiet word.
- Birria, barbacoa, al pastor, chicken tinga and steak — zabiha-sourced
- Warm tortillas, pickled onion, cilantro, lime, salsas labelled by heat
- Mexican rice, refried beans, elote, guacamole and chips
- Horchata, agua de jamaica and agua de tamarindo in dispensers
Quantities for a party that grazes all evening
Plan two to three tacos per adult — about 4 to 6 ounces of cooked filling and two to three tortillas each — and remember the raw order runs roughly a quarter above the cooked weight because of shrinkage.
At a long standing party, expect consumption spread across the evening rather than concentrated, which means replenishing in waves rather than laying everything out at once. The figures are consumer-source planning brackets; your proposal carries the itemised numbers.
It needs no staff on site
For a December party in a venue that is already crowded, a format that puts no additional people in the room is worth more than it sounds. We set, label and leave, and collect after the event rather than during it.
That also makes it one of the cheapest ways to feed a large holiday party properly, which in the most expensive month of the year is usually the deciding argument.
