Catering a fundraiser or a gala is a balancing act no other event quite shares: the room has to feel generous enough to loosen a checkbook, and the spend has to respect a budget line that's answerable to a board and to donors. We've learned to weight the budget toward the moments guests actually see and remember — a carving station, a real dessert, a passed first course during the reception — and to engineer the rest of the meal quietly so the money shows up where it counts rather than where it doesn't. A gala that looks like it cost more than it did is the whole brief.
